Brad Weaver, General Manager

Brad Weaver serves as LaCo’s general manager. A lifelong resident of Memphis, Tennessee, Brad moved to the Florida Panhandle in February 2023. Before heading South, he served as the assistant general manager for BABALU, another Spell Restaurant Group establishment located in his hometown. Similar to LaCo, BABALU serves made-from-scratch Latin-inspired dishes and craft cocktails, making the transition a little easier for the restaurant industry veteran of more than 15 years.

As the leader of the LaCo team, Brad monitors operational costs, orchestrates and motivates staff, ensures LaCo provides guests the highest quality dishes, drinks and hospitality, as well as many other duties. He enjoys serving in this capacity because he knows he has a supportive team behind him in Spell Restaurant Group. Leadership provides all the tools he needs to be successful, which motivates him to bring his best to work every day. 

Brad’s favorite menu item is the Seacrest Ceviche and the Brioche French Toast, so be sure to give them both a try during your next visit. When he is away from the restaurant, he enjoys spending time with his wife Jennifer and their dog named Wrigley. If you know sports, you can probably guess Brad’s next favorite pastime… watching the Chicago Cubs play (at Wrigley Field or on the road!) He also follows the Memphis Tigers football and basketball programs quite closely. Go Tigers!

 
 

Jasline Lee, Assistant General Manager

Jasline relocated to the Florida panhandle in January 2022 to become the assistant general manager at LaCo. Prior to the move, she served in the same capacity at LaCo’s sister restaurant BABALU Jackson in Jackson, Mississippi. Jasline’s passion for the restaurant industry began years ago during a stint at a local bakery in her hometown of Natchez, Mississippi, and she has never looked back.

In her new role, the Alcorn State University graduate manages front-of-house employees, ensures the restaurant is ready to welcome guests each day and that staff is prepared to create amazing dining experiences for guests. Her favorite part of working for Spell Restaurant Group is getting to meet new people and experiencing the upward mobility the company offers its team members. When not on the clock, you can find Jasline enjoying LaCo’s Throwback Tacos (gotta try those!), baking desserts, watching crime documentaries or hanging out with friends.

 

Tim Antignane, Executive Chef

Seasoned culinary industry veteran, Tim Antignane, joined the team in spring 2024 as executive chef. As a talent who appreciates a menu driven by fresh ingredients, Chef Tim finds himself right at home here at LaCo.

Born in Atlanta, Georgia, and raised in Memphis, Tennessee, Chef Tim draws inspiration from many places, but nothing compares to the influence of his grandmother. He spent a great deal of time watching her in the kitchen, and from those experiences, found there’s nothing that compares to the love a family member can bring to the table. Chef Tim strives to make every guest feel like a member of the LaCo family by serving up creative dishes with a whole lotta love.

Prior to taking on his new role, Chef Tim served as executive chef for True Food Kitchen in Nashville, Tennessee. He also spent several years with LaCo’s now sister restaurant BABALU prior to the brand joining the Spell Restaurant Group family. During Chef Tim’s time with BABALU, he oversaw culinary operations for locations across the Southeast.

When Chef Tim is away from the restaurant, he enjoys looking for inspiration in cookbooks, fishing, playing golf and watching the Atlanta Braves. His favorite LaCo dishes are currently the Crab Cake Benedict and Tuna Tlayuda, so be sure to try those two out during your next visit.

 

Jesse Robertson, Director of Operations

Jesse Robertson hails from New Haven, Connecticut, a lively, coastal city in the greater New England area. After moving to Memphis in 1980, he began his restaurant career at his step-father’s restaurant, EC Flanagans, located where Brookhaven Pub & Grill stands today. Jesse joined Spell Restaurant Group in 2019 as director of operations with decades of experience and having worked for BABALU five years prior. In his current role, Jesse works to motivate and energize his team members, develop strong restaurant leaders and ensure business runs smoothly.

When he’s on the clock, you can find the University of Memphis grad hard at work at LaCo here in Seacrest Beach, Florida, or at sister restaurants BABALU Memphis East, BABALU Overton Square or Brookhaven Pub & Grill in Memphis, Tennessee.
